The vineyards are situated around Mas Vespeille, a 12th-century estate, on the foothills of the Corbières between Rivesaltes and Salses-le-Château. \u003cmeta charset=\"utf-8\"\u003eThe grapes are destemmed and directly pressed as soon as they arrive at the winery. Alcoholic fermentation is then stopped through \u003cstrong\u003efortification, with the addition of 96% alcohol\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp dir=\"auto\" class=\"PDq2pG_selectionAnchorContainer\"\u003eDuring the winter, the wine is kept in a large open vat. The aim is for the Vin Doux Naturel to begin its slow process of oxidation through contact with the air.\u003cspan class=\"PDq2pG_selectionAnchor\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"auto\"\u003eBefore bottling, the wine is placed outside the cellar in glass demijohns for several months.
