This light white \/ soft orange wine is made with 40% \u003ca href=\"\/collections\/carricante\"\u003eCarricante\u003c\/a\u003e, 40% \u003ca href=\"\/collections\/catarratto\"\u003eCatarratto\u003c\/a\u003e, 10% \u003ca href=\"\/collections\/grillo\"\u003eGrillo\u003c\/a\u003e and 10% \u003ca href=\"\/collections\/trebbiano\"\u003eTrebbiano\u003c\/a\u003e grapes.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"utf-8\"\u003eThe grapes are hand-harvested on the volcanic soils of Mount Etna at the end of September, then destemmed and crushed. Spontaneous fermentation takes place in neutral epoxy tanks, with different skin-contact times depending on the grape: 2 days for Carricante, 5 days for Catarratto and 10 days for the remaining varieties. The wine is pressed at the end of fermentation.
