We do not sell Houillon-Overnoy, out of principle. When we get hold of a few bottles we give them away rather than add to the speculation around them. The domaine has two hectares of it, including older vines in the Les Viandris lieu-dit.

This bottle carries white wax, the domaine's mark for Chardonnay. Yellow is Savagnin, red is Ploussard. The vintage is on the small shield at the neck, which is just as well, because the label itself never names the grape.

2020, and what the heat did

2020 is a vintage Emmanuel talks about directly when the subject turns to the climate. It gave genuinely high degrees, and yet the wines held their freshness and their drinkability, which he describes as brilliant and as a reason for some hope about what is coming.

He is less reassuring about Chardonnay in general. Asked which grapes suffer most as it warms, he names Ploussard first and then Chardonnay, because dry years give difficult fermentations. Working with no added sulphur makes that a real problem rather than an academic one, and Pierre has said plainly that fully natural winemaking without SO2 is going to get harder.

How it is made

No sulphur goes in, and neither does anything else, unbroken here since 1986. A 2012 Chardonnay from this cellar spent four years in foudre before it was bottled, which gives some idea of the patience involved. Total production across every wine is 20,000 to 25,000 bottles in a normal year, from six and a half hectares.

We have not tried this vintage, and we would rather say so than invent a note for a bottle we are giving away.

The full story, and both of our films with Pierre and Manu, are on the Emmanuel Houillon Overnoy collection page.

//cdn.shopify.com/s/files/1/0221/6407/8692/files/maison-pierre-overnoy-houillon-chardonnay-2020-arbois-pupillin.png?v=1792691025
