The inspiration came from his time in the Jura, where he fell head over heels for Ploussard (or Poulsard, a debate he says you do not want to get into). For Dane, Ploussard ticks every box: complexity, vibrancy, freshness and purity, usually with a touch of wildness and funk, and always gluggable. Etc Etc was designed to be that kind of everyday wine, and he feels every version has got better.\u003c\/p\u003e\n\u003ch2\u003eProduction Process of Etc Etc 2024 by Momento Mori\u003c\/h2\u003e\n\u003cp\u003eBoth grapes were fermented separately and handled very lightly, with around 3 days of carbonic maceration each. They were then gently pressed, the Schioppettino into 2 amphora and the Syrah into 1 stainless steel tank, where they spent 9 months.
