Schlawina 2022 is a natural wine crafted by Projekt Wildtyp, in the Burgenland region in Austria. This orange wine is made with Neuburger grapes, which spend 11 days macerating on the skins and 13 months aging in a mix of barrel and stainless steel tanks.

No added sulphur

Production details of Schlawina: Schlawina is made by Boris Kovacic at Projekt Wildtyp in St Margarethen, Burgenland, Austria. Kovacic, a former stem cell and cancer researcher, started this project in 2021 after saving nearly 1 hectare of 40+ year-old Neuburger vines from being uprooted. The wine sees 11 days of maceration on the skins, then ages 13 months in a mix of 65% new untoasted oak barrels and 35% stainless steel. No added sulphur.

Tasting Notes: We have not yet tried this vintage of Schlawina by Projekt Wildtyp, but we hear it has notes of pear, dried apricot, black tea, caramel and a saline citrus edge.

We ship every Wednesday. Order by Tuesday 10am.

Projekt Wild Typ

NATURAL WINES BY PROJEKT WILDTYP

Projekt Wildtyp is Boris Kovacic's winery in St. Margarethen in Burgenland. Boris spent 18 years in stem cell and cancer research before making his first vintage in 2021. His vines grow on very different soils, from schist and quartz to limestone and clay, and he sticks mainly to regional grapes: Grüner Veltliner, Blaufränkisch, Neuburger, Müller-Thurgau and Zweigelt, plus one field blend of ten varieties.

His rule is nothing added and nothing taken away. He uses wild yeasts, skin contact from two days to three weeks and ageing in steel and used barrels, with no added sulphur at all since the 2023 vintage. The names are as playful as the wines. Lumpazi and the pét-nat Sprudla are skin-contact Müller-Thurgau, Schlawina is Neuburger from 45-year-old vines on schist, and Krawallo is Grüner Veltliner from schist. Gramuri is Blaufränkisch from limestone, and Heppi Peppi is Zweigelt with some whole bunches.
