Tasting Las Cañas 2021
This wine is an excellent showcase for the Muscat of Alexandria grape, also known in Italy as Zibibbo. It's of course got that aromatic quality you look for in the grape, but it goes deeper with a mineralic edge making it quite gastronomic, especially with its mild grippy structure, tingly energy and depth. It's nice to see an expression of this grape which is not overly floral and more terroir-driven.
Expect notes of salted apricots, herbs like thyme, clementine peel, white pepper, mild savoury elements such as cheese rind (in a very nice way), green tea, aniseed. Very good. Decant for best results and serve in a decent glass.

The grapes for Las Canas were harvested within a 3-week period, from late July to mid August 2021.
10% of the grapes were destemmed, crushed, and gently pressed. Another 50% of the grapes were left to macerate after destemming in PVC vats for one week, without punching down but with wetting the skins, then transferred to fibreglass vats to finish fermentation. The remaining 40% followed the same process but with a 2 week maceration period.
The wine was then aged for a year before bottling in July 2022, unfiltered & unfined and without added sulphur.
