Indigene Cremant du Jura is a very special, sparkling natural wine crafted by Stephane Tissot, in the Jura region in France. This sparkling wine is made with 55% Chardonnay, 35% Pinot Noir, 5% Poulsard, and 5% Trousseau.

The reason it is special is because it is refermented in the most natural way possible, rather than using yeasts from elsewhere to restart the fermentation to cause bubbles, it is created with their own product and thus their own native yeasts, which is a Vin de Paille (aka straw wine, a sweet wine made with dried grapes).  This secondary fermentation and aging continues for 6 months.

This technique using the Vin de Paille gives the wine more depth and complexity than most other Cremants from the region.
