Production Process of Savagnin Oeuf 2018 by Tony Bornard

The natural wine Savagnin Oeuf 2018 from the producer Tony Bornard is made with 100% Savagnin and is aged in a concrete egg (oeuf béton) vessel.  This egg shape keeps the wine constantly in a moving motion

The Savagnin is grown on various plots of Triassic marls and Bajocian limestone scree
Sites: "La Bidode", "La Meunière", "Les Plantés", "Feule", "Aspis"

Harvest date: September 26, hand-picked

One-month maceration and 11 months of aging in the egg (see photo)

Tasting Notes for Tony Bornard Savagnin Oeuf 2018

Whilst we have not yet tried Savagnin Oeuf 2018, we hear it has notes of vibrant citrus zest, subtle white flowers, and a hint of dried herbs on the nose. The palate is said to be fresh and lively with flavors of green apple, a touch of almond, and a mineral-driven, saline finish that lingers elegantly.

We expect some bold tannic action with its 1 month of skin contact and 14% weight, so an orange wine likely best suited for food

Philippe Bornard evolved Domaine Bornard in 2005, as a close friend and neighbor to the legendary Pierre Overnoy in the Jura wine region in Pupillin. Now run by his son Tony Bornard, the estate continues to produce wines with a distinctive Jura character, while Tony adds his own unique touch, steering the wines in exciting new directions.
