About Everything is Free 2023 by Momento Mori, in Dane Johns' Words
The following info comes straight from Dane Johns' release notes. Dane is a firm believer in the saying "the only thing permanent is change" and likes to approach his winemaking the same way he approaches life: keep moving forward, keep learning and keep evolving. He says these new wines keep the character of what he has made in the past, but are a little more refined and "tighter", a progression he is extremely happy with.
This is the style of wine Dane enjoys drinking the most: a complex yet easy drinking, light(er) red with great structure.
Production Process of Everything is Free 2023 by Momento Mori
The fruit was grown by the Chalmers family on the slopes of their Mt Camel vineyard in Heathcote. The soils here are very rocky and volcanic, a complex mix of ironstone, dolerite, green basalt and jasper, which Dane says always gives the wines plenty of minerality.
Each grape was handled separately, with fermentation in 100% stainless steel. Both were fermented with a semi-liquid carbonic method that Dane has been refining for the past 8 years. He explains that it gives good extraction of flavour and phenolics while keeping the wine on the leaner side, rather than over extracting tannins or making it overtly "fruit forward". It was bottled by gravity, with 15ppm SO2 added just before bottling.
