An Oolong Fig Leaf Proxy combines a blend of applewood smoked oolong and distilled fig leaf flavoring, which work together to create a smooth and buttery taste with a savory aftertaste.

Aromatic and complex, our PROXY • A is a unique blend of smoky oolong and distilled fig leaf for a smooth and buttery taste with a salty finish. In short, a perfect non-alcoholic alternative to kombucha-based wine.

ALCOHOL-FREE DRINKS BY BOUCHE

Bouche is a Berlin brewery making kombucha and alcohol-free alternatives to wine. It started in 2019 in an artist's studio and moved a year later into a converted warehouse in Marzahn, where brewing, development and design all happen under one roof. The base is black and green tea, fermented in closed steel tanks.

The flavour comes from macerating the ferment with teas, hops, woods, flowers and fruit, using tricks borrowed from brewing and winemaking. The Proxy range is built to sit where a bottle of wine would: Proxy A is a light, cool red style based on smoked oolong, Proxy B a fresh white style from walnut leaf and quince, and Proxy C a fizzy one with genmaicha, sencha and kaffir lime leaves. Each Proxy is a single batch and editions change. The Pet Nats, Hibiskus, Melone Szechuan and Juniper, are lightly sparkling, low in sugar and good for aperitif hour.
