Production details of Il Bruto & The Beast: Il Bruto & The Beast is a Cortese-based Pet Nat from Valli Unite in Costa Vescovato, Piedmont. The Cortese sees 12 hours on its skins for added texture, then ferments once before unfermented must is added at bottling to start the second fermentation in bottle.

Tasting Notes: We have not yet tried this vintage of Il Bruto & The Beast by Valli Unite, but we hear it has notes of apple, honeysuckle, cider and light brioche.
