Bianco is a natural wine crafted by Valli Unite, in the Piedmonte region in Italy. This fresh and zippy white wine is made with Cortese grapes, which is good value and ideal for those new to natural wine, as not too wild and with some sulphites added.

There is also a budget friendly red and rose available..

Production details of Bianco (Valli Unite): Bianco is Valli Unite's everyday white, 100% Cortese from 20+ year-old vineyards that have never seen chemicals. Wild ferment with 3 days of skin contact for texture, then aged in stainless steel before light filtration and bottling with minimal sulphur. Valli Unite is a 30-family cooperative in Costa Vescovato, Piedmont.

Tasting Notes: We have not yet tried this vintage of Bianco by Valli Unite, but we hear it has notes of pear skin, bruised apple and a faint Parmesan rind savouriness.

NATURAL WINES BY VALLI UNITE

Valli Unite is a farming cooperative in Costa Vescovato, in the Colli Tortonesi of south-east Piedmont. Three young local farmers, Ottavio Rube among them, set it up in 1981 to keep farming rather than leave the land. Today a few dozen people farm around 100 hectares, sharing the jobs and earning the same, with vines alongside cereals, a vegetable garden, Piedmontese cattle, bees and an agriturismo.

They moved to natural winemaking from 2006, and since 2013 every fermentation has been spontaneous, with only small amounts of sulphur. Most wines ferment in stainless steel and rest in cement, and the grapes are local: Barbera, Dolcetto, Croatina, Cortese, Timorasso and Favorita. Ottavio Rube Rosso and Bianco, Alessandrino and the Bag in Box Rosso are everyday favourites, Terragno is a skin-contact Cortese and Favorita aged in acacia, and San Vito and Derthona show the more serious side of Timorasso.
