Varron Savagnin 2020 is a natural wine crafted by Domaine Buronfosse, in the South Jura region (known as the Sud Revermont) in France. This white wine is made with Savagnin grapes grown on the plot Les Varrons, also where Labet and Ganevat farm.

Domaine Buronfosse is quite simply, in our humble opinion, one of the most underrated gems in Jura. 

Based in the village of Rotalier in the Sud-Revermont, just around the corner to Jean-Francois Ganevat and working some of the same plots, the duo behind Buronfosse is now solo, with Jean-Pascal running the domaine at the moment. 

This 2020 vintage of Savagnin taken from the prestigious “Les Varrons” also farmed by Labet and Ganevar is very much a perfect Savagnin. The Varron is essentially red clay mixed with limestone, giving this wine a vibrant minerality and with its winemaking style, excellent precision of acidity and mild reduction in the best format. 

This wine is aged for 34 months on the lees making it very complex and interesting.

Reductive, spicy and mineralic. Precise in it’s acidic balance and a joy to drink from start to finish.
