Production Process of Le Garde Corps 2020 by Tony Bornard

Le Garde Corps 2020, a natural wine from producer Tony Bornard, is made using 100% Trousseau grapes. The fermentation and maceration take place in neutral tanks made of stainless steel or fibreglass, with approximately one month of skin contact during fermentation involving daily punchdowns and pumpovers. After fermentation, the wine is aged for about two years in old oak barrels.

Tasting Notes for Le Garde Corps 2020 by Tony Bornard

Whilst we have not yet tried this exact vintage of Le Garde Corps 2020, we hear it has notes of black plum, black pepper, and resin on the nose, coupled with expressive aromas of rose and cherry with a subtle herbal edge.

The palate is described as rich, spicy, and very glouglou, revealing dominant cherry fruit balanced by refreshing acidity and deep minerality. It offers a noble structure with supple tannins and a vivid, racy, and precise Jura profile, making it an especially strong and charming bottling from Tony Bornard’s natural, organically farmed cuvée.

Philippe Bornard evolved Domaine Bornard in 2005, as a close friend and neighbor to the legendary Pierre Overnoy in the Jura wine region in Pupillin. Now run by his son Tony Bornard, the estate continues to produce wines with a distinctive Jura character, while Tony adds his own unique touch, steering the wines in exciting new directions.
