Tasting Notes for I Am The Ninja 2023 by Testalonga

This 2023 vintage of I Am The Ninja 2023, has notes of honey, pear, melon, and lemon fruit with a very subtle herbal nuances of herbs (sage?) on the nose. It delivers a playful sparkle with it's off-dry sweetness which is accompanied by a cool, minty herbaceousness and refreshing acidity despite it's Residual Sugar.

Would work great as a starter glass in the sun, or with spicy food (a little sweetness works great with chilli heat - trust us!) or even as a dessert fizz to accompany fresh fruit styled desserts like Eton Mess or raspberry Pavlova

Production Process of I Am The Ninja 2023 by Testalonga

I Am The Ninja 2023 from Testalonga is a natural wine made from 100% Chenin Blanc, following the méthode ancestrale pét-nat process. The wine is first fermented and aged in stainless-steel tanks for two months, then before fermentation is completed, it spends an additional eleven months aging on its own lees in the bottle before disgorgement. There is no skin contact during production, as the grapes are directly pressed. We mention this as Craig Hawkins of Testalonga is known to enjoy making skin-contact wines, although less so nowadays.
