This wine features prominent volatile acidity.

Diverse small gatherings, successive spontaneous fermentations and long maceration. Respectful ageing in old barrels during 12 months. Sensible and fluctuating
evolution. The counterpoint between slenderness and freshness is given by its volatile acidity.
