ALCOHOL-FREE DRINKS BY JO%YZ
JO%YZ is the alcohol-free project of Nina Schley, a sommelier in Hamburg-Ottensen who built her first prototypes in a small lab of her own. Meeting Arno Lenz, also a sommelier, who runs a cider press at the Schaalsee lake east of Hamburg, turned the idea into a real product. They made their first pet nat together in July 2025, and Arno's Kernobstmanufaktur in Kneese does the bottling. The labels are by the artist Simone Scardovelli.
Rather than stripping the alcohol out of a wine, both drinks start with water kefir, then get grape juice, verjus and a spiced tea blend, which brings light acidity and some fermented character. The JO%YZ Pet Nat (0% Alcohol) is lightly sparkling, with dried apricot, lemon, ginger and a tea of green and white tea, lemongrass, orange peel and hibiscus. The JO%YZ RED (0% Alcohol) is still and deep red, with blackberry and lime. Serve both chilled.
