Georges 2021 is a natural wine crafted by Cave Aux Fioles, in the Roussillon region in France. This orange wine is made with 60%  Malvoise and 40% Grenache grapes, which are assembled and co-fermented with three weeks of maceration, then pressed manually in an old vertical wooden press.

We look forward to trying this orange, which we hear features sweet spices, nuts and poached apricot. It's said that coriander and toasted notes come through on the finish, balanced by a fresh lift and very good length. Excited to pop one open here!

La Cave Aux Foiles

La Cave aux Fioles is Carlos Badia's wine project in Roussillon, in the Catalan Corbières near Perpignan. Carlos came to wine production after around thirty years in the wine world, with experience spanning Sommelier duties, marketing and international trade. That long background eventually led him towards making wine himself.

By 2016 Carlos was experimenting on a small scale, and the domaine has since grown to around ten hectares, including many old vines on clay and limestone soils. Carlos works with a broad collection of Mediterranean grapes: Grenache Blanc, Grenache Gris, Grenache Noir, Macabeu, Muscat, Carignan, Lledoner Pelut, Cinsault, Syrah, Mourvèdre and Malvoisie all appear. Since 2022 no additions of SO2 have been used in the cellar (from our knowledge)
