Le Départ En Vacances Blanc 2024 is a natural wine crafted by Cave Aux Fioles, in the Roussillon region in France. This white wine is made with 75% Grenache Gris and 25% Muscat blanc à petits grains grapes from vineyards around Espira-de-l’Agly and the foothills of the Catalan Corbières, on clay soils over a karstic plateau.

 The grapes are hand-harvested in the morning in 11 kg crates, directly pressed, then fermented at low temperature to preserve the aromatics. The wine is aged in stainless steel and bottled in January, with 3 g/hl of sulphur added at bottling.

Mild herbs on the nose with this low acid white, with touches of butterscotch and thyme on the palate, and some white pepper tingles. A good wine for the price and especially for those seeking lower acidity.

La Cave Aux Foiles

La Cave aux Fioles is Carlos Badia's wine project in Roussillon, in the Catalan Corbières near Perpignan. Carlos came to wine production after around thirty years in the wine world, with experience spanning Sommelier duties, marketing and international trade. That long background eventually led him towards making wine himself.

By 2016 Carlos was experimenting on a small scale, and the domaine has since grown to around ten hectares, including many old vines on clay and limestone soils. Carlos works with a broad collection of Mediterranean grapes: Grenache Blanc, Grenache Gris, Grenache Noir, Macabeu, Muscat, Carignan, Lledoner Pelut, Cinsault, Syrah, Mourvèdre and Malvoisie all appear. Since 2022 no additions of SO2 have been used in the cellar (from our knowledge)
