To me you are everything (Herb Infused Cider)

To me you are everything (Herb Infused Cider) is a hybrid cider crafted by Katla Wines, in the Rheinhessen region in Germany. Katla Wines is Jasmin Swan, who makes wine in Wollstein in Rheinhessen. She started out in 2019, spent time on the Mosel, and now works from her own cellar in Rheinhessen. The bottles are known as much for their artwork, often made with drag queens, as for what is inside them, and the quantities are tiny.

This one is not a wine at all. It is a cider infused with herbs, made in the same cellar in Wollstein and treated with the same hands-off approach as the wines.

We have not yet tried this new one, but know it is a mixed cider-like drink based on grapes, apples, pears, water and herbs (mugwort & birch) Regent grapes X foraged apples and pears and infused with water, mugwort and birch. Drinks like a dark cider, tastes like the forest, brambles and mugwort are noticeable on the nose. Low tannins, it is bitter however Jasmin says. Drink best cold. Slightly sparkling but not a petnat. 7% alcohol.
