Herbal sweet and smooth with a touch of bitter. It’s a charmer with a sting the perfect prelude to a suave evening

FOODPAIRING:
Prosciutto, jamón ibérico, aged cheeses, olives and nuts. Practically anything that oinks cures ferments or dries

SERVING SUGGESTION:

ALCOHOL-FREE DRINKS BY SHWUNG

SHWUNG is a small drinks company from Ghent, Belgium, started by Milan and Simon, who met as first-year bioengineering students working on yeast strains and brewing science. Later they wanted something without alcohol that still had the depth of a good bottle of wine at dinner. They could not find one, so they started developing their own in the kitchen, textbooks open.

They call them phonetic wines: the names sound like wine styles, but none of them is dealcoholised wine. Each one is built from botanical infusions, juices and fermentation with their own SHWUNG culture. Or Anj takes the orange wine role, with juniper, black pepper, cedarwood and chilli over fermented pineapple juice. Vehr Mut Ros Soh is a red vermouth stand-in with tulsi, hibiscus and rosemary, and Spuh Man Tay is the sparkling one, with grape juice and a pinch of saffron.
