Indigene Cremant du Jura is a very special, sparkling natural wine crafted by Stephane Tissot, in the Jura region in France. This sparkling wine is made with 55% Chardonnay, 35% Pinot Noir, 5% Poulsard, and 5% Trousseau.

The reason it is special is because it is refermented in the most natural way possible, rather than using yeasts from elsewhere to restart the fermentation to cause bubbles, it is created with their own product and thus their own native yeasts, which is a partially permenting grape juice from the next vintage. So once the wines fermantation has stopped, it is aged for a little and then the following vintage sees the addition of new grape juice to this wine to create a secondary fermentation and thus, capturing the bubbles.

 

The first experienent Stephane Tissot did with this was with a Vin de Paille (aka straw wine, a sweet wine made with dried grapes), and contrary to most online references, this was swapped for a fermenting use after the first experiment This secondary fermentation and aging continues for 6 months.
