Le Pinoctambule 2022 is a natural wine crafted by Tony Bornard, in the Jura region in France. This red wine is made with Pinot Noir grapes grown in Pupillin, up the road from Arbois. The grapes are pressed and undergo fermentation in Inox tanks, and then are aged in old neutral Foudre barrels

This wine has a very sexy nose, almost southern french in style and Pinot Noir would not be a first guess smelling blind, there is some more Grenache or Syrah vibes. It’s a warm vintage for sure, and on the palate this wine has some structure that equals the nose, and could be great for aging.

Rich, cassis and black cherry elements with soft leather hints and green bell pepper in the background. This is a nice wine and not typical for Jura, a sign of the changing climate and a wine that would be great for aging 3-5 years.

This process of change was an important period for Tony Bornard and he opens up about this and the emotional aspects related to it.
