Il Santo, or Podere Il Santo, is based in Lombardy and run by Eugenio Barbieri, who came to viticulture from an academic background and works with natural wine. There is not much information out there about the place.
One wine from them here: 9Cento 2005, a blend of Barbera and Croatina. It gets 60 days of maceration on the skins. The Barbera then spends two years in oak barrels of 500 to 750 litres, the Croatina one year in the same vessel sizes. Being a 2005, it has had twenty years behind it before reaching the shelf.
