MURI state that "Yamilé is a Peruvian winemaker and friend of ours who taught us about carbonic maceration - the technique that makes Beaujolais wine ultra fruity. We use it here on the whole raspberries. Honey is also used to create a 'mead', which we infuse with rhubarb that is lacto-fermented and then smoked over beechwood. The smokiness and background spice give the blend a funky vibrancy that is not common in sparkling roses, which we find to often be a little too polite."

Soft red fruits and creamy smokiness, with a delicate aromatic finish. Yamilé is refreshingly dry, bubbly and approachable with playful flavour complexities and vinous funkiness.
