Koji Rice Series 1 is a non-alcoholic bevage crafted by MURI Drinks, in the Copenhagen region in Denmark. This non-alcoholic drink, (0.4%, this is the same amount as a ripe banana) also known as a Proxy wine is made with water, rice, smoked lavender, Kefir and Mahleb.
We found this delicious beverage to be super gastronomic, slightly lactic and nicely savoury. Its got a silky texture, a little salty with notes of rice pudding, cream and lavender.
Muri state that "This is the first in our Koji Rice Series and is technically inspired by Japanese amazake, traditionally a non-alcoholic cousin of sake.
We steam cook rice and ferment with koji, triggering an enzymatic transformation that turns the starch into fermentable sugars. A secondary fermentation develops acidity. This rice 'wine' is blended with a water kefir infused with smoked lavender and mahleb, a tiny cherry stone that add delicate notes of vanilla, cinnamon and almond.
The name Koji Rice Series 1 is named after KRS-1, a famous New York rapper who features on our blendery play list. The blend is an unfiltered, still expression that captures the earthy and herbaceous notes in the koji rice. Possessing a silky, luxurious mouthfeel, the blend is medium-dry, with soothing warm undertones."
