Whilst we have not yet tried this exact vintage of I Wish I Was A Ninja 2022, we hear it has notes of a bright yellow hue with lifted floral aromatics and ripe stone-fruit like peach and apricot, alongside zesty citrus. The palate is described as feather-light yet intense, featuring crunchy green apple and tangy lemon balanced by a gentle honeyed sweetness that softens the vibrant acidity. Subtle layers of dried apricot and meadow hay add complexity beneath the primary fruit, culminating in a long, textured finish with energetic bubbles.
Overall, it is characterized as a refreshing, off-dry natural pét-nat with a spritzy-sweet profile reminiscent of “lemonade for grown-ups,” perfect chilled for poolside or aperitif enjoyment, and for those who are not afraid for a little Residual Sugar.
Just like I Am The Ninja, it's sister wine, this fizz would work great as a starter glass in the sun, or with spicy food (a little sweetness works great with chilli heat - trust us!) or even as a dessert fizz to accompany fresh fruit styled desserts like Eton Mess or raspberry Pavlova
Production Process of I Wish I Was A Ninja 2022 by Testalonga
The natural wine I Wish I Was A Ninja 2022 from the producer Testalonga undergoes primary fermentation in stainless-steel tanks at a low temperature of around 4 °C before being bottled under crown cap to complete fermentation and age on lees using the Méthode Ancestrale/ Pét-Nat process. The time spent in the stainless-steel tank prior to bottling is unspecified, while the wine ages on lees in the bottle for approximately 10 months before riddling, disgorgement, and re-capping. The wine is made from 100% Colombard grapes, which are direct pressed with no intentional skin contact, resulting in essentially zero skin maceration time, unlike many of Testalonga's other wines.
