Univers 2022 by Muchada Leclapart is a natural wine made in Andalusia, Spain with Palomino Fino and Palomino California grapes.
Palomino is the main grape used in making Sherry.. And sadly not enough producers make a normal wine from it, and far fewer choosing to make it naturally.
Muchada-Leclapart are somewhat experts of the grape, and showcase it’s refreshing, salty, mineralic qualities perfectly which if served blind, often can feel a bit like a Jura Savagnin actually.
Decant this wine for 30 minutes to let the reduction blow off… and ideally serve it blind to fellow wine enthusiasts as it’s quite a fun wine to try and guess the country of with its crisp acidity and flavour profile not like much else in Spain!

Muchada Léclapart say Univers is the entrance to our “Universe”, fresh, saline and elegant; pure “palomino” grape. Its grapes come from the lower area of our best vineyard, “La Platera”, with clay-limestone soils of “albariza” and “lustrillos”. Its salinity and purity stand out, due to the fermentation in the old champenoise tanks made of solid steel. The young vineyard highlights the salinity of the plot and shows subtle hydrocarbons and powder, aromas associated with large “albariza pago”.
100% old Palomino and California. Vineyards of 25 years. Fermented and vinified in a steel tank with interior ceramic paint for 9-10 months.
Muchada-Léclapart is the project of David Léclapart (famed French producer of Champagne) and Alejandro Muchada (winegrower from Cádiz) in “Marco de Jerez”, a historic wine region, located on the Atlantic coast of Andalusia, where Sherry production is famed. Together they are implementing the experience and knowledge of David in chemical-free & holistic agriculture as well as the French school of good winemaking.
