Vin Jaune "Château-Chalon" 2016 is an oxidative natural wine crafted by Stéphane Tissot, in the Jura region in France. Limited to ONE PER ORDER.

This special, 15% white wine is made with Savagnin grapes, which undergo the usual Vin Jaune process aging under flor for at least 6 years + 3 Months in barrel, making the wine oxidative. This wine uses grapes grown around the prestigous Chateau Chalon village in Jura, famous for Vin Jaune.

Stephane Tissot was the first in the region to showcase terroir is also relevant in Vin Jaune, and as such, he vinifies all his Vin Jaune plots seperately. Château-Chalon is the most prestigious location for Vin Jaune where there is only limited land available to work with, and as such this is the most expensive Tissot bottle.

What difference does soil type make to Vin Jaune?

Most Vin Jaune producers will assemble all the plots they have from all different soil types into their production of Vin Jaune, and the importance of the barrels and cellar was given the focus. Stephane Tissot however, has showcases in his range of Vin Jaune the stark differences the soils from Trias and Lias create even with an oxidative style, which can be quite powerful.

This is why he is a pioneer of Vin Jaune, and in our mind and many others with his very low intervention methods to let the wines shine throughout - a master in the minds of wine lovers.

Stéphane Tissot and his wife Bénédicte craft exceptional, terroir-driven natural wines from their 35-hectare vineyard in Jura. After taking over the family estate, Stéphane brought a fresh perspective, converting the land to chemical-free farming and aligning the vineyard practices with the lunar cycle.
Their white wines, made from regional varieties like Chardonnay and Savagnin, are precise, mineral-driven, and pure, while the reds—Pinot Noir, Trousseau, and Poulsard—are lighter, aromatic, and full of red-fruit character. Domaine Tissot is also known for their Vin Jaunes, which are vinified separately by plot (like ‘En Spois’), a unique method that sets them apart as the only domain to do so.
