Saseti 2022 by Monte Dall´Ora is a natural wine made in Veneto with Corvina, Corvinone, Rondinella and Molinara Y Oseleta grapes.
Perched on the limestone terraces of Castelrotto in the heart of Valpolicella Classica, Monte Dall’Ora farms its 25- to 70-year-old pergola-trained vines biodynamically, letting the “saseti” (“little stones”) in the soil shape the wine’s mineral pulse. Corvina and Corvinone dominate the field blend, rounded out by Rondinella, Molinara and the heirloom Oseleta, all harvested by hand from southeast-facing slopes between 70 – 200 m high.
The 2022 was fermented spontaneously with native yeasts for about a week in unlined cement and steel, with gentle punch-downs and zero sulfur during the ferment. It rested a brief three months in concrete and stainless before being bottled unfiltered with only a whisper of SO₂, keeping alcohol to a nimble 12 %.
In the glass we hear it is a vivid ruby, offering notes of sour cherry, raspberry and wild herbs, laced with dried rose, citrus peel and a saline snap. Bright acidity, fine powdery tannins and a stony finish make it dangerously drinkable—think of it as a chill-worthy, high-definition snapshot of Valpolicella’s hills in a generous vintage.
