Monte Dall´Ora - Stropa Amarone 2011 is a classic, premium aged Italian wine from Veneto, which as is with Amarone wine is made with dried grapes to achieve that characteristic, big concentrated flavour.
Grapes: Corvina 50%, Corvinone 20%, Rondinella 20%, Molinara, Croatina and Dindarella 10%.
Vineyard: on the Castelrotto hill in the municipality of San Pietro in Cariano, Valpolicella Classica area, 150-200 meters above sea level
Soil: calcareous-calcarenitic of Eocene origin, south-east exposure
Vine training: Veronese pergola with rows of married vines, where the vines are supported by tall trees (mulberry, almond, ash, and field maples). We have maintained the tradition of tying the shoots with willow shoots (stropa), which are much more resistant and flexible against the strong winter winds that blow through this hill.
Average age of vines: Mixed from 25 to 70 years
Vineyard cultivation: organic and biodynamic agriculture
Harvest: Manual harvest from mid-September, selection of the best bunches in wooden trays placed in the fruit cellar to dry naturally for 3 months
Vinification: destemming, maceration and spontaneous fermentation in open vats for approximately 30 days with hand-pressing
Aging: in 25hl oak barrels for 4 years and in bottle for at least 36 months
Description: Deep red in color, it displays broad curves in the glass, thanks to its superior alcohol content. The nose recalls dried grapes, with complex and iridescent aromas, finishing with complex and refined spicy notes and balsamic hints. On the palate, it is fleshy, enveloping, and very persistent.
Pairing: a wine to pair with mature cheeses, but also with complex dishes such as game and braised meats, a slow wine to dedicate time and serenity to tasting.
